Yes! you can create fabulous fondant sandwich cookies to decorate

mini-cupcakes and delight the guests at your next party!

The fondant sandwich cookies on this page

were made by Kentucky sugar artist Jeeyoun Kim.

Ingredients

1 or more Rycraft cookie stamps

White fondant (we used Wilton brand fondant)

1  2″ round cookie cutter

1  2 1/2″ scallop cookie cutter

Rolling pin

Royal icing

Wilton tip #21

Food color dust

Optional: toothpicks

Method

Stamp with your favorite stamp on the fondant (click here for fondant instructions) rolled out and cut the circle with the 2″ round cutter. Make 2 with the same design for the sandwich cookie.

Paint the stamped design with food color dust – these were painted with Petal and Pearl Dust for the very delicate shades of color you see on these cookies. Use a palette or dish to mix your colors.

Cut 2 1/2″ circles out of colored fondant with a scallop-edge cookie cutter. Put the stamped circle on the scallop fondant circle.

Pipe the edge of the small circle with the royal icing using Wilton tip # 21.

Fill the middle of the fondant cookies with the royal icing.

Cover the filling with one of the stamped cookies. Insert toothpick in the middle of the cookie if you need it.
